The Spanish also introduced staples such as rice, wheat, and meats (beef, pork, chicken). Native Peruvian ingredients, dishes, and culinary techniques have experienced a revival in the past decade thanks to local culinary superstars such as Gastón Acurio, Virgilio Martínez Véliz or Pía León.
