Many cultural groups have shaped Mexico's culinary history: Did you know that pan dulce (sweet bread) is based on bread that French bakers brought to Mexico in the 17th century? And the famous tacos al pastor were inspired by shawarma that Lebanese immigrants introduced at the turn of the 20th century? Then there were the crops, animals as well as cooking techniques which were introduced by the Spanish. Today's Mexican food is a hybrid but it still abounds with many dishes, ingredients and techniques that predate European colonization. Mexican food is like a love letter that roots from family traditions, is inspired by the earth's richness and sent with passion to whomever gets to enjoy it. Although animal products are used in most Mexican dishes, Chef Paul has recreated plant-based versions of many Mexican classics. Join him for an evening of fascinating culinary history and delectable Mexican indulgence! snacks & welcome drink *** aguachile de sandía (watermelon slices bathed in a spicy, umami, citrus sauce) mashed avocados with chopped chili, white onions, roasted garlic and mango black hummus (mashed black beans with a dash of chili oil, topped with epazote leaves) different types of tacos with home-made tortilla - al pastor (shredded celeriac and cauliflower marinated overnight, served with grilled pineapple) - honguitos (fried enoki mushrooms glazed with vegan BBQ sauce; served with salsa verde, avocado and physalis) *** flambéed plantain with tequila
