Having grown up in Vancouver, Chef Dan is one of the "San Pellegrino Top 10 Chefs Under 30" in the USA and has worked in Michelin-starred restaurants such as Daniel in New York (Michelin**) as well as Alinea in Chicago (Michelin***). After arriving in Zurich in 2017, he found his love for soulful cooking by bringing new ideas of American BBQ, burgers, and friend chicken to Switzerland through three exciting restaurants: BrisketThe Bite and Yardbird


In 2018, Chef Dan and his team operated NightMarket, the first Japanese Yakitori concept in Zurich. The new cuisine was immediately met with positive reviews, and Chef Dan has recently opened his own version of a Japanese Izakaya: Gaijin.
