CHEF DANIEL
Chef Daniel is a Mexican chef, consultant as well as a gastronomic researcher specializing in traditional Mexican cuisine. He is the president of the culinary collective "Mar de Cortez" and has advised various restaurants in Mexico. Passionate about disseminating pre-Hispanic Mexican cuisine, Chef Daniel has worked around the globe and recently started a position as executive chef/lecturer in Switzerland.
From an early age, Chef Daniel would help his mother in the kitchen... always excited about discovering different flavors. Fascinated with pre-Hispanic Mexican cuisine, Chef Daniel has visited all 32 states of Mexico in order to learn more about the ingredients as well as techniques from the past. His favorite dishes include pozole, birria, mole, tacos al pastor as well as shrimp aguachile.
