And the famous tacos al pastor were inspired by shawarma that Lebanese immigrants introduced at the turn of the 20th century? Then there were the crops, animals as well as cooking techniques which were introduced by the Spanish. Today's Mexican food is a hybrid but it still abounds with many dishes, ingredients and techniques that predate European colonization. Mexican food is like a love letter that roots from family traditions, is inspired by the earth's richness and sent with passion to whomever gets to enjoy it.
